Valentines Day Sugar Cookies

I am always on the hunt for a good recipe.

This time I was looking for a sugar cookie to make for my hubby's office for Valentines Day. I have recipes, but I was hoping to find a recipe that was a little different from the ones I already had.

I started with my usual cookbooks... nothing there.

Next I searched in my food apps... nothing I hadn't already seen.

Last I went to the Internet... some of the same ole same ole, but then I found Annie's Eats.

First requirement: Annie's photographs of her sugar cookies made my mouth water.

Second requirement: Was I able to find 90% of the ingredients already in my cabinets? I usually won't touch a recipe if the recipe requires more than the baking norm. Winning!

Cookies:
4½ cups all-purpose flour
4½ tsp. baking powder
¾ tsp. salt
1½ cups (3 sticks) butter, at room temperature
1½ cups sugar
3 large eggs
5 tsp. vanilla extract

Frosting:
5 cups confectioners’ sugar, sifted
1/3 cup (5 1/3 tbsp.) unsalted butter, melted
1 tbsp. vanilla extract
7-8 tbsp. milk (plus more, as needed)
Food coloring (optional)
Sprinkles (optional)

- Preheat your oven to 350˚ F.

- Line your baking sheets with parchment paper or a silicone baking mat.

- In a medium bowl combine the flour, baking powder and salt; whisk together until blended well.

- In another bowl combine the butter and sugar and beat together on medium-high speed until soft and fluffy.

- Beat your eggs in the butter/sugar, one at a time, mixing well after each egg. Blend in the vanilla.

- With your mixer on low, add in 1/3 of the flour mixture at a time until all the ingredients are evenly mixed and incorporated. Cover and chill the dough for 1 hour. Although I found 30 minutes worked well too.

Annie's recipes calls for to scoop a scant quarter cup of dough and roll into a ball. Flatten the ball slightly and place on the prepared baking sheet and repeat with the remaining dough, spacing the cookies at least 2-3 inches apart.

I tried three different ways to see which would result in the nicest looking cookie.

A.) I placed the dough onto parchment paper, making a basic log, and then rolled the dough into a "snake" and twisted the ends of the parchment paper into opposite directions, to compact the cookie dough, and then placed it in the fridge to chill. After 30 minutes I cut them into 1/4" slices. (Example: White cookie in the picture)

The parchment cookie made a compact "coin-like" shaped cookie.

B.) I chilled the dough, covered in plastic, for 30 minutes then took the dough out rolled it into a 1" ball and took a bottom-floured glass and pressed down on the ball to form a more circular cookie. (Example: Pink cookie in the picture)

The ball/flattened cookie cracked a bit on the sides, but you could press your finger over the cracks to fix this, but a they turned out to me of a store-purchased cookie.

C.) I rolled the dough into a 1" ball and then placed them onto the cookie sheet without pressing them down.

The ball effect turned out just like it went in.. a ball and not very well cooked, as I would have liked it.

In the end I liked the way B cookie turned out.

- Bake the cookies about 10-12 minutes or just until set. Do not over bake the cookies letting them turn brown! Let the cookies cool on the baking sheet for several minutes and then transfer them to a wire rack to cool.

- In a small sauce pan melt the butter.

- In a medium bowl add the confectioners sugar.

- Add the melted butter, vanilla, and milk to the bowl and whisk until smooth. You might need to add more milk, but do so by a teaspoon at a time.

- I frosted half my cookies with the white frosting then added 6 drops of red food coloring to create the sweet pink color and then frosted my remaining cookies and added Valentine heart sprinkles to the cookies. Store in an airtight container.

Week four of my New Years Resolution.

What girl doesn't like a make-up and when you add a great deal in with it you have my attention. If you haven't visited an Ulta store you need to look for one in your area. I love Ulta. It's definitely a one-stop-shop for girls who are looking for make-up, hair care, perfumes and lots more.

If you visit an Ulta store be sure to sign-up for the FREE Ulta customer card. Ulta rewards you for every dollar you spend in their store on products and seervices. The Ulta card redeems your rewards every three months and depending on the amount you have spent in the last three months you are assigned to a certain dollar level. Each level rewards you with a free item, based on that level. If your not interested in the item on your rewards level Ulta will allow you to use up your rewards in the lower levels giving you a chance to redeem your rewards for even more free items.

Last quarter I traded in my rewards for the lower levels and I walked out with three free nail polishes. Love it!

Because I have an Ulta customer card I also receive their discount mailers. This last week I decided I needed to replace some of my make-up brushes. Ulta currently has a buy two get two free sale going on and I took advantage of this deal. I purchased two eye shadows and two brushes and I got two eye shadows and two brushed free. I also used my current mailers $3.50 off coupon. With the buy two/get two deal and my $3.50 coupon my total bill came to $19.

Resolutions - Week 3

Week three of my New Years Resolution.

Resolutions-Schmesolutions

New Years resolutions...

I don't normally like to make resolutions, because I tend to quit them two months after I've made them. I guess it's the nature of the beast. However, last year I made a personal resolution to find a home church and begin attending every weekend.

I guess I need to digress a bit. We moved to Washington State, from California, a few years ago and I never found a replacement church for us. But, I made a resolution to go back to church and find a weekly home for us to worship in. I am happy to say we are members in a church now and have been going steady every Saturday night (yes, our church has a Saturday night service) since January of last year.

Here it is again, a new year, a new resolution.

I am taking on my finances. I haven't always watched my money as well as I could have, but neither have I wasted money either. I decided this year I was going to go the extra mile. I am going to clip coupons, watch for weekly deals and put money back into my family's pocket. Now don't expect to see me on TLC's Extreme Couponing. I don't need a second job clipping coupons for hours at a time nor do I have the energy and to patience to do what the those fine ladies of that show do. But, I can challenge myself to make changes.

So, here I am two weeks into my new resolution and I have a few figures to give you.

Week One:

Target-
Our local Target revamped the inside of their store to include a grocery section. I normally wouldn't think about going to Target to grocery shop, but I am I have found Target a great way of picking up the NON-Costco supplies. If your a Costco shopper you'll get this statement. Sure I love cantaloupe like the next guy, but I don't need seven of them, nor can I eat seven of them before they spoil, nor do I have the space to store seven cantaloupes.

You get the picture. Back to Target.

Did you know you could view Targets weekly ad online as well as clip and print coupons from their site? I love this. Target usually has coupons available on the same items in their weekly specials. They have also been promoting weekly gift card specials. If you buy a specific amount of a certain product Target has you will give you a five dollar gift card for you to use on your next visit. If someone handed you a FREE five dollar bill, wouldn't you take it? In just the last two weeks I have received two five dollar gift cards.

I did some shopping this week and my total purchase came to $101 and with my printed coupons, mail-flyer coupons, sale items and my FREE five dollar gift card I reduced my bill by $16 dollars. No, I will probably never have a segment on Extreme Couponing, but I do have $16 back in my pocket. Resolution for week one accomplished.

That brings us to...

Week Two:

Regal Movie Theaters-
Do you have a Regal Crown Club card? If you don't, you should. The Crown Card is FREE to you and for every dollar you spend purchasing your movie tickets or buying any goodies at the concession stand you will earn points. To date we have earned earned several FREE bags of popcorn, FREE sodas, FREE movie tickets and just this last week Regal offered a coupon, on their Facebook page, for a $2 Zap Pack. What's a Zap Pack? Yeah, you got me on that one too.

Zap Pack:
A small popcorn, small soda and a small candy all in a convenient carrying caddy.

What did I have to do to get this? I had to "Like" Regals Facebook page and when I did Regal sent the Zap Pack coupon right to my cell phone, which I had to show at the concession stand. They scanned the bar code right off my phone and for just $2 I got my Zap Pack. The Zap Pack was just the perfect size to have a munch fest at the movie theater. My husband and I usually spend $15-$20 for something like this to share, but not this weekend.

Most theaters are sporting some kind of rewards program you just have to ask them about theirs.

I am two weeks strong in my New Years Resolution. I just hope I can keep this one going strong.

The Weekend

This last weekend I celebrated my 11th Wedding Anniversary.

My husband and I decided to take it easy, have a well prepared dinner of lobster and steak at our favorite restaurant, by the fireplace, go to the Tulip Festival and just enjoy being together.

Our dinner was wonderful, our favorite table was ready for us, the Tulip Festival was something else to behold and our quiet time was enjoyable.

I thought I would share some of the shots we were able to capture of the fields of tulips that went on for days!

(BTW... NO it wasn't Red Lobster either!)

I love this fabric!

This fabric is from the All Star 2 line by The Quilted Fish for Riley Blake and it has such a fun feel to it with it's fall inspired colors and it's the perfect fabric to create something for a boy.

I was so inspired by the line that I designed a quilt block for it.

Say hello again to Karissa Jo, an all organic version of her former self.

I was contacted by a very special customer of mine and she asked me if I would be willing to make Karissa Jo again for her daughter, Emmalee, who has an allergy to polyester. I couldn't say no to Cristy and knowing how important it would be for Emmalee to have a doll that wouldn't cause her any harm.

German Chocolate Cake for MY Valentine

This cake is dreamy and sweet!

1/2 Cup Water

4 Ounces German Sweet Chocolate

1 Cup Butter, softened

2 Cups Sugar

4 Egg Yolks

1 Tsp Vanilla Extract

1 Cup Buttermilk*

2 1/2 Cups Cake Flour

1 Tsp Baking Soda

1/2 Tsp Salt

4 Egg Whites

1. Preheat your oven to 350 degrees.

2. Grease and flour three 9" round cake pans.

3. Sift together the flour, baking soda and salt.

4. In a small sauce pan, heat your water and the four ounces of chocolate until it's melted; remove from the heat and allow the chocolate mixture to cool.

5. In a large bowl, cream the butter, sugar until it is fluffy. One at a time add the four egg yolks and then gradually add the melted chocolate mixture and vanilla extract.

6. Beat in the flour mixture alternating between the buttermilk and ending with the flour.

7. In another bowl beat the egg whites until the create stiff peaks. Fold 1/3 of the whites into the batter then add the remaining until the cake looks like a chocolate cake mix.

8. Pour equal amounts of the cake mixture into all three pans and bake for 30 minutes or until a toothpick come out clean. Allow the cakes to cool in the pan and then turn the cakes unto a wire rack to cool further.

Coconut Frosting:

1 Cup Sugar

4 Egg Yolks

1 Cup Evaporated Milk

1/2 Cup Butter

1 Tsp Vanilla Extract

10 Ounces Coconut, grated

1/4 Cup Milk, warm

1. In a double boiler add the sugar, egg yolks and evaporated milk. Stir with a wire whisk until the yolks are fully incorporated. Add the butter. Bring to a boiler and then turn the heat down and simmer for 12 to 15 minutes, stirring constantly until the mixture thickens. Add the vanilla and the coconut. Turn off the heat and let it cool.

2. Place your cake on a cake stand or plate and lightly spread the frosting on the first layer. Add the next layer and repeat the same process and again with the last layer.

*I didn't have any buttermilk on hand, so I used 1 Tbsp of white vinegar and placed it into a measuring cup and then added milk until it measured 1 cup.

The Donut Muffin

Mmmmm... donuts!

I am a freak for donuts and when I found this recipe I knew I had to make it. I love donuts and I love baking, but I really HATE the idea of having to frying anything! I was more than ready to take a try at this recipe when it indicated it was ti be baked, even if it happen to be 10:30 at night. This lovely, fluffy, mouth melting donut in a muffin is a dream come true!

This recipe makes 24 donut muffins, which is way too many for my house to consume, so rather than half the recipe, I made the entire recipe anyway and sent a bag full of the donut muffins to work with my husband and put the remainder in the freezer for a later date.

12 ounces (3 sticks) Unsalted Butter, room temperature

1 3/4 Cups Sugar

4 Eggs

6 Cups All-Purpose Flour

1 Tbsp plus 1 tsp Baking Powder

1/2 tsp Baking Soda

1 3/4 tsp Salt

1 tsp Ground Nutmeg

1 2/3 Cups Milk

1/4 Cup Buttermilk

Topping:

8 ounces (2 sticks) Unsalted Butter, melted

2 Cups Sugar

2 Tbsp Ground Cinnamon

Preheat the oven to 350 degrees and place the rack in the middle of the oven.

In a large bowl, cream the butter and sugar. Beat in the eggs one at a time, until the eggs are mixed in.

In a separate bowl sift the flour, baking powder, baking soda, salt and nutmeg.

Mix the milk and buttermilk into one glass.

In thirds; add the milk mixture first into the butter mixture and mix together and then add a third of the flour mixture and mix, ending with the flour mixture. Do not over mix.

Grease and flour a standard muffin pan. Scoop enough batter into each tin till the batter is level with the muffin rim.

Bake the muffins until firm to the touch; about 30-35 minutes.

Topping:

In a microwave safe bowl, melt the butter.

In another bowl add the sugar and cinnamon and blend together.

Roll the muffin in the butter and then roll the into the sugar mixture.

It tastes like a donut, a muffin, a piece of cake and it is good!

**I didn't have any buttermilk on hand, so I used 1 Tbsp of white vinegar and placed it into a measuring cup and then added milk until it measured 1 cup.

A delightfully scary treat for your child or have them assemble it!

1 Jar Spaghetti Sauce
1 Package English Muffins
2 - 4 Individual Mozzarella String Cheese Sticks
1 Can Black Olives, sliced
1 Can Green olives or Bell Pepper, diced

♥ Separate the English muffin into two parts and lightly toast it.

♥ Take the English muffin out of the toaster and spread a small amount of spaghetti sauce on each side of the open faced muffin.

♥ Taking the string cheese and pulling it apart; drape the pieces across each muffin taking on the look of a wrapped mummy. Make sure to leave space for the eyes.

♥ Place two black olives on each muffin for the eyes and place either a small cut of the green olive or bell pepper inside each of the olives creating the pupils of the mummy's eyes.

♥ Cook the pizza in a 350 degree oven for 10- 15 minutes or until the cheese has melted.

Nutella Tarts

Nutella Heaven

If you have never tried Nutella... you must!

Nutella is made from hazelnuts and has the consistency of a spreadable peanut butter.

A lot of people spread it on bread and eat it for breakfast.

I like to eat it as a treat, with it's smooth taste, it's as decadent as dessert.

Nutella in cased in a tart-like shell with a heart on top is simply... Heaven!

I took detailed shots on how I made this tasty treat, but lost all of the photographs that were on my cameras memory card. So, unfortunately I can only share the recipe and instructions.

Tart Dough:

2 Cups All Purpose Flour

1 Tablespoon Sugar

1 Teaspoon Salt

1 Cup Butter, cold, cut into 1" squares

1 Egg

2 Tablespoons Milk

1 Teaspoon Vanilla Extract

1 Jar Nutella Spread

In a large bowl add the flour, sugar and salt and mix together with a whisk.

Cut the butter into pats and add the butter to the flour mixture. Using a food processor, pastry blendor or just your good ole' hands to mix the butter and flour together creating small bits of butter and flour.

In a small bowl, add the egg, milk and vanilla and mix well.

Add the egg mixture to the flour bowl and blend together to make a fairly moist dough.

Add flour to your rolling surface and roll the dough out to about of an 1/4" to cut out your circles about 3" x 3" and place each circle in your small cupcake pan.

Add 1 teaspoon of nutella to each tart.*

This dough should make about about 20 tarts.

I saved some of the dough to cut out tiny hearts to top each tart.

*I would use a pastry bag to do this method. like I DIDN'T! :)

A layer cake from Moda: Lumiere De Noel

I haven't done a quilt in quite a few years and never bigger than baby size, so I am excited and nervous to take on this task, which I hope to give as a Christmas gift.

I was really drawn to this collection, mostly by the French inspired theme and the color red.

Keep tuned as I cut with no pattern in mind and I just go by feel and the design of each square to guide me.

Why don't a have a quilt plan? Because, what fun would it be to be prepared and that's how I roll, with things like this.

FIVE Hour Tour

Last Saturday I went to a book signing for the Pioneer Woman's Cookbook by Ree Drummand. I was excited to get to meet her and get a signed copy of her cookbook. I had never been to this particular book store before and didn't know what to expect. Little did I know my book signing adventure would turn into a five hour tour.

As I walked in the door of the book store I was greeted with Ree's picture. I headed to the counter to purchase my cookbook. When you purchased your book you received a letter for a group you would be assigned to to get into line for the signing. I was in group H, which meant I would have a bit of a wait till my group would be ready to get into line. My poor husband had no idea what he was getting himself into! I decided to roam around while I waited and I discovered a whole new world in this book store.

They had several restaurants to grab a bite to eat at, tons of tables to chat and play games and below the book store there were stores to shop at.

I decided to grab a table and sit and read through my book. I happen to sit at a table with another "Pioneer Fan", which is what they called us over the load speaker and I began a conversation with the woman at the table.

Meet Staci, from Kennewick, Washington. Staci drove three and half hours, by herself, to be at this signing. Staci had arrived at the book store at 1 PM in the afternoon and the signing wasn't until 5 PM. She had gotten into group E, which wasn't much further away from my group. You are beginning to get the idea of how many people were at this signing. We began to waste away the time talking together. She was sweet, friendly and it helped to pass the time with her. It didn't matter that we had just met, but it always takes one common thread that pull people together to bond and ours happen to be Ree.

We chatted and not long after another couple arrived at our table with their cookbooks and we all began to talk. It was like the time when I was young, much much younger, when my girlfriends and me would line up in the early morning hours to score tickets for a concert, except this time round I got to sit on a chair indoors, away from the rain outside.

The table began to discuss the recipes in the book and which ones we had attempted and we were successful at. About an hour and a half later they announced they would be lining up group E and we said goodbye to Staci. My husband came to my table and sat down to do the wait with me till they called my group. We continued to talk, ate California Rolls from the Japanese restaurant and by then the "Big Band" showed up to play for the crowd. You heard me right. Every Friday and Saturday night the bookstore puts on a show with bands and the community can come and dance for free. I couldn't believe it, in one place they had books, food, stores, bands, and signings. I had wondered how the book store had arrived at their name and it wasn't until I saw the banners they had hanging up.

They were building their book store around one place, the community, in which they were located and to bring everyone together under one roof. Well, their concept made an impression and the community latched right onto it. By the time the band started to play the place was packed with people ready to dance. I sat and watched a variety of ages of this community dance to the big band sounds and enjoying themselves thoroughly. I decided to get some air and a few moments of quiet time and before I knew it it was time for my group to get into line. My husband accompanied me in line so he could take pictures of me talking to Ree while she signed my book.

Okay, here is where it gets weird! My husband always picks the perfect time to say the dumbest things to me. I am three people away from getting my book signed and he turns to me and says, "You're going to start blabbering at her aren't you?" I wasn't nervous to meet Ree, but now he had done it. He made me feel insecure about my sometimes ranting I do when I get nervous. What had started off to be be no big deal turned into an insecure tennis ball match in my head of me talking to myself, "Your gonna screw it up now. Your gonna blab and embarrass yourself and say something stupid!" Well, it worked and I did!

Ree was lovely, friendly and just as beautiful in person. If she thought anything about my crazy nonsense talk, it doesn't show in her face. I am glad I got my book signed, and got to meet Ree, even if it was on a five hour tour!

I do have to say a special thank you to my husband for hanging in there with me through a very long wait, for taking the pictures of Ree signing my book and whom I suspect has a crush on her (do see me any in any of the pictures? I'm just sayin'), and for being the same nut job I married and still love after ten years of marriage, even with his morphed idea of funny.

The best part of my five hour book tour?

All of it!

Roasted Garlic

Have you ever attempted to roast garlic before?

Have you ever eaten roasted garlic before?

It is easy to do, it can be used on a variable of recipes, it tastes good and it is healthy for you, garlic that is. If you haven't eaten roasted garlic before you have no idea what you are missing.

Never fear I am here to show you how to do this.

1 Clove of garlic

Extra Virgin Olive Oil

With a sharp knife, cut the top of the bulb of the garlic.

See it's simple and easy.

Pour 1/2 teaspoon of extra virgin olive oil on the tops of the garlic

and let it sit for two minutes to soak in the oil.

Pour another 1/2 teaspoon of olive oil over the tops of the garlic.

Place the garlic on a oven proof dish

and cover with aluminum foil.

Cook in the oven at 350 degrees for 30 - 45 minutes,

depending on how many bulbs you are roasting.

This is what is should look like when it comes out of the oven.

Don't worry if yours is a little darker than mine,

ovens temperatures vary.

It still looks good no matter what angle you look at it.

Wait until the garlic cools before you handle the bulb.

If your as impatient as me you use a glove and a fork and pull them out.

Leave them whole and use them in Spaghetti sauce or Chicken Marsala.

Or smash them with a fork and use them on

pizza, focaccia bread, garlic bread or in dips.

As Eddie, from National Lampoons Christmas Vacation would say,

"It is goooooooooooood!"

Pineapple Upside Down Cake

Mmmm... Brown Sugary love!

"What is so new about Pineapple Upside Down Cake?"

Nothing really, but I have two reasons to make this cake...

First:
Monday is Pineapple Upside Down Cake day.

Second:
It is my brothers, Brian's, favorite cake and its his birthday!

Happy Birthday Brother Fry!

(Inside joke, don't ask)

There are a two common ways to make this cake; by scratch or by the box. I have made this recipe both ways. Today I am going to cheat and do it by the box, but I am going to give you some new steps you might not have thought of. Don't worry, I will include a recipe to make the yellow cake by scratch. Lets get stated.

1 Box of Yellow Cake Mix
2 - 3 Tablespoons of Butter
1 Can (20 ounces) of Pineapple Chunks, reserve the juice
1 Jar of Maraschino Cherries
Brown Sugar
Parchment Paper

Preheat your oven to 350 degrees.

New Tip:

When you go to mix the boxed yellow cake together, substitute a portion of the water with some of the pineapple juice from the canned pineapple. My boxed cake required 1 1/3 cup of water and substituted the 1/3 portion for the pineapple juice. Too much juice and it will change the recipe. I also add a teaspoon of vanilla extract just for a little push.

New Tip:
I also use a professional cake baking pan. They are taller than the average baking dish on the general market and think this cake looks better fuller.

Place the butter in the baking pan and place t in the oven to melt. When the butter has melted take it out of the oven and this is when you have to work quickly, so the butter doesn't cool and congeal.

Place the pineapple chunks in a nice pattern along with the cherries. I don't put too many cherries on the cake, which think can be overwhelming.

New Tip:
Most versions of this cake use pineapple rings or crushed pineapple. I don't use either. It is harder to cut through the rings when serving the cake and they usually slide off the cake leaving other pieces without any pineapple and I think the crushed pineapple has too much liquid in it to give a chance for the brown sugar to settle. With the chunks you can slice through the cake without issues and each piece you slice has pineapple in manageable bites.

New Tip:
Place a ring of the parchment paper around the sides of the pan. This Helps to slide the cake out when it comes time to flip the cake over.

Sprinkle a good amount of brown sugar over the entire cake pressing down the brown sugar around the edges and through out the cake. This will help to secure a solid cake top.

Pour in the entire cake mix over the pineapple brown sugar mix and place in the oven to bake for 40 minutes.

New Tip:
If after 40 minutes the top of the cake is still wobbly and the toothpick test comes out wet cook for 5 more minutes and then turn the oven off and leave the pan in the oven for another 10 to 15 minutes. The heat will continue to bake the wet part of the cake without burning the rest of the cake.

If you use the smaller baking pans then half the cake mix between both pans and cook for 30 to 35 minutes.

After the cake has finished baking and cooled enough I still like to slice the top off the cake for an even bottom layer. This cake didn't necessary need a cutting, but it certainly helps in the flipping process.

This cake doesn't always land perfectly on the plate without falling apart, but man is it worth the process!

Yellow Cake Mix

1 Cup All-Purpose Flour

1 teaspoon Baking Powder

1/2 teaspoon Salt

2 Eggs

2/3 Cup Sugar

1/4 Cup Milk or Pineapple Juice

1 teaspoon Vanilla

Tomato Basil Pizza

This is what pizza should taste like!

Today was my husbands birthday and he has been asking me to make him pizza from scratch. Now I have no problem cooking any of his requests, but the idea of making the dough by scratch really doesn't set my heart afire. But, it's his birthday and I want him to have a special birthday. I hated the idea of wasting great ingredients if the pizza dough was horrid. I love Ree Drummond, The Pioneer Woman, and one of her favorite meals is her homemade pizza. I trust that she test drives all her recipes and so I used her pizza dough recipe for my husbands birthday dinner request. I decided to photograph my process and you can see my pizza turned out just as hers did. Lets begin!

1 Teaspoon Active Dry Yeast or Instant Yeast
1 1/2 Cups Warm Water (105 - 115 Degrees)
4 Cups All-Purpose Flour

1 Teaspoon Kosher Salt

1/3 Cup Extra Virgin Olive Oil

Here was my only mistake... the water was too hot to add the yeast.

Wait for it to cool between 105 to 115 degrees!

In a medium to large bowl I added the flour, salt, and extra virgin olive oil. and then added the yeast after it has mixed well with the warm water to become active.

Now I am not a rich girl and I would love to have one of those fancy smancy mixin' machines, but I don't. I just used what God gave me at the end of my arms. It was sticky and messy and all over my fingers, but it got the job done and it looked just like Ree's dough.

At this point rub olive oil in the bowl and fold the dough into a ball with a bit of olive oil over, so it won't stick to the bowl. I used my dough right away, but if you decide not to use your dough be sure to put plastic wrap over the top of the bowl and place it into the refrigerator.

Since this recipe yields two pizzas you will only need half of the dough to start your first pizza. Using either a cookie sheet or pizza stone and begin to shape your pizza by spreading out the dough into your desired shape. Next drizzle olive oil all over the dough and place generous helpings of basil on top of your pizza.

Package of fresh basil

2 Fresh Mozzarella Balls

2 - 3 Fresh Roma Tomatoes

Add your mozzarella and tomatoes and top with any extra mozzarella and add some Parmesan cheese.

Place your pizza in the lower half of your oven in a preheated oven at 450 degrees for about 20 minutes or until the dough looks golden brown.

I have to say this was a tasty pizza and the dough was great. More important my husband was in pizza heaven and said, "This is the best pizza!" Two bites later he then said, "This was a really good birthday meal." and he kissed me! Mission accomplished.

Deviled Eggs

I have made several versions of this recipe, depending on my mood and the ingredients I have on hand, but this one seems to be the one my family loves best.

12 Eggs, hard boiled

4 - 6 Tablespoons Mayonnaise

2 - 4 Tablespoons Sweet Relish

1/4 Teaspoon Salt

1/4 Teaspoon Dry Mustard

1 Tablespoon Dill Weed, plus extra for topping

In a large pot with water, place the eggs and cover them with water about an inch above the body of the eggs.

Boil the eggs for 15 minutes from the starting point from when the water begins to boil. This time frame has always produced a perfectly boiled egg every time.

Pour out the hot water and under cold running water slightly crack each egg and peel the eggs immediately. I have found if you peel the eggs right after they came out of the pot the shell and membrane comes right off rendering a smooth egg.

With a clean, sharp knife slice the eggs in half, placing the egg white on a platter and the egg yolk into a bowl.

Clean your knife under hot water between each egg you cut. This will help to get a clean cut on every egg.

With the backside of a fork smash down the egg yolks until the yolks have a smooth consistency.

Add the remaining ingredients and mix together until the filling is smooth.

To give the deviled eggs a finished look I fill a cookie press with the filling, which give the deviled egg a finished look. If you don't have a cookie press fill a plastic sandwich baggie with the filling and snip a tiny piece off the end of a corner (enough for the filling to squeeze out of it) and fill the egg shells.

Sprinkle a small amount of the dill weed on top of the egg to decorate.

The Color of Eggs

I can smell the vinegar. I can see yesterdays newspaper layered across the kitchen table to catch the occasional spill from the coffee cups filled with that magical colored water that would consume our white, hard boiled egg and turn it into masterpieces of egg-art. All of my brothers and sister gathered around the table waiting, timing our egg bath and having to move your color clockwise to the next awaiting dipper. Always the contest to make the egg that would stand out above all others. It's Easter and it wouldn't be the same if we didn't celebrate the memories of it by dying eggs.

Although the prepackaged store dye is easy to use and comes in a convenient package , I prefer a homemade recipe to dye my eggs with. The ingredients are simple and depending on your color preferences, you can create almost every variable shade possible. So, spread out the newspaper and get started!

Peach to Salmon

1 Tablespoon Vinegar

1 Drop of Red Food Coloring

1 Cup Boiling Water

Pistachio to Green

1 Tablespoon Vinegar

1 Drop of Yellow Food Coloring

2 - 4 Drops of Green Food Coloring

1 Cup Boiling Water

Light Yellow to Canary Yellow

1 Tablespoon Vinegar

2 Drops of Red Food Coloring

1 Cup Boiling Water

Robins Egg Blue to Dark Blue

1 Tablespoon Vinegar

1 - 2 Drops of Blue Food Coloring

1 Cup Boiling Water

Boil your eggs for 15 minutes, starting at the time the water begins to boil. This insures your eggs are cooked on the inside. Cool and dry your eggs completely before you begin the dying process.

Your color preference is determined by the length of time you leave your egg in the dye. The shorter it stays in the dye, the lighter your egg will be and the longer your egg stays in the dye, the darker it will be. To achieve the colors above I kept my eggs in the dye 5 - 7 minutes, keeping the yellow in one minute longer that the rest.

No matter what colors you choose to make your eggs have fun doing it. Make the memories for your child to carry to adulthood, which I know will be recalled when they are sitting around the table with their children making new memories like the ones you created with them.

*Since these recipes require boiling water there is always the chance of receiving a potential burn. With anything always use caution, especially when children are participating. I see no reason why the water can't be hot instead of boiling to reduce the risk of a burn.

Silly rabbit, crafts are for kids!

2 Toilet Paper Rolls

1 Cotton Ball

Pink Tempura Paint

Construction Paper: White, Pink and Black

Glue

Scissors

Paint the toilet paper rolls pink and set aside to dry.

From the white paper:

Cut two bunny ears

Two eye balls

One pair of teeth

From the pink paper:

Cut two bunny ear inserts, smaller than the white ones.

From the black paper:

Cut two eyeballs, larger than the white ones.

Two long whiskers.

Glue the pink ear inserts on top of the white ears and then glue them in the middle of the two toilet paper rolls securing them and the two rolls together to form the body of the rabbit.

Glue the two white eyes on top of the black eyes and glue them to the front of the rolls, equally spaced apart.

Glue on the teeth just below the eyes in the center of the front roll.

Glue the whiskers on top of the upper part of the teeth and then the cotton ball on top of the teeth for the nose.

Hoppy Easter!

*You can add another cotton ball on the back of the rolls for a bunny tail.

It's a light and tasty salad for the spring!

Mandarin Orange Salad

1 Cup Almonds, sliced

1 Tablespoon Butter

2 Tablespoon Dijon Mustard

1/2 Teaspoon Sugar

1/2 Teaspoon Salt

1/4 Teaspoon White pepper

1/2 Cup Vegetable Oil

1 Head Romaine Lettuce or Mixed Greens

1 Can (11 ounces) Mandarin Oranges

1 Small Red Onion, thinly sliced

Saute' the almonds in the butter until golden; set aside .

Combine the Dijon mustard, sugar, salt, white pepper;
whisk in the oil.

Combine in the lettuce, oranges and almonds and toss well.

Spring Cleaning

With the winter months finally behind us and spring already making its presents known , the warmer weather has inspired me to do a thorough cleaning of my home. Having had the house closed up for the cooler months it feels as if the dirt has settled into all the nooks and crannies, even though I clean every week. This is also the time of year that has my family slaves to our allergies. With allergies and a very low tolerance for the cleaning supplies our local market has on their shelves, I had to find another way to attempt my planned spring cleaning. Then it hit me. "What did my mother and grandmother use when they cleaned?" Then I remember our home smelling like Easter and homemade lemonade. They used products that were readily available at the market, and still are today, and used them to make their own cleaning products. This is not a new concept by any means, but we are used to a "take it off the shelf and go" mentality that we don't think about the harmful things we do to ourselves every time we use these products that are suppose to be better, faster, easier. Today the madness stops!

Today I commit myself to take the time to make the same homemade solutions that were good enough for my mother and good enough for my grandmother. I will no longer use the brand products to clean my home in the past and in return I will have a healthier home and a healthier me! My pocket book will also thank me later.

Window Cleaner

2 Teaspoons Vinegar

1 Quart Water

Sink Tub Tile

1/2 Cup Baking Soda

2-3 Tablespoons Liquid Soap

Toilet Bowls

1/4 Cup Baking Soda, sprinkled into the bowl

Drizzle the bowl with vinegar and let sit for 1/2 hour, then scrub and flush

Add Borax for the harder stains

Mildew Remover

Dissolve 1/2 Cup Vinegar, 1/2 Cups Borax in Warm Water

Apply with a sponge or spray bottle

Disinfectant

1/4 Cup Borax

1/2 Gallon Hot Water

Garbage Disposal

Grind ice to sharpen the blades

Add Orange Juice or Lemonade in the disposal for smells

Refrigerator

1 Cup Apple Vinegar in the fridge will remove the smell in 2 days

Corned Beef and Vegetables

The Perfect St. Patrick's Day Dinner in the Crockpot!

3 Pounds Corned Beef

2 Tablespoons Pepper Corns

1 Bay Leaf

Water

1 Medium Onion, cut

3 - 4 Cups Baby Carrots

5-8 Small Potatoes, washed and cut into 1" cubes

Place the corned beef into the crockpot and cover the top with the pepper corns and bay leaf.

Cut up the onion and place into the crockpot. Pour enough water into the crockpot to cover the corned beef for cooking. Cover and cook on low for 6-8 hours or on high for 4-5 hours.

The last hour to hour and a half of the cooking process place the carrots and potatoes into the crockpot to cook.

Pull the corned beef out of the crockpot and allow it to cool on a wooden cutting board for 5-10 minutes before cutting into slices. Serve with the carrots and potatoes.

Lady Bug!

1 Toilet Paper Roll
1 Paper Plate
Red Paint
Black Paint
White Paint
2 Q-Tips
Scissors
Hot Glue Gun and Glue

Paint the paper plate red and set aside to dry.

Paint the toilet paper roll black and set aside to dry.

Cut the paper plate into a small circle about 5" round and then cut the circle in halve.

Take a Q-tip and dip it into the black paint and make dots on the two half circles; creating spots on the back of the lady bugs wings. Set this aside to dry.

Cut a lady bug face from the left over paper plate and paint it black and set it aside to dry.

Take the remaining Q-Tip and dip it in the white paint and create two eyes and a mouth on the lady bugs face and set aside to dry.

While the face is drying glue the two wings together, over lapping them at the top and then glue them onto the black toilet paper roll.

Glue the face onto the top of the lady bug wings.

You have created a beautiful lady bug!

1 Toilet Paper Roll
1 Paper Plate
Black Paint
Yellow Paint
Scissors
Hot Glue Gun and Glue

Paint the paper plate yellow and set aside to dry.

Paint the toilet paper roll black and set aside to dry.

Cut the paper plate in the shape of a dog bone measuring the length of the paper plate.

With the left over paper plate pieces; cut three yellow bee stripes out about 5" long and hot glue them around the body of the toilet paper roll, centering the first one in the middle and the other two remaining piece 1" apart from the top and bottom of the middle stripe.

Hot glue the wings around the body of the toilet paper roll bending in the side to the body.

Cut out a bumble bee face with antennae, creating the face of the bumble bee. You can hole punch the eyes out of paint or draw the eyes and nose on the bee. Glue the face on the body of the bumble bee.

You have the beginnings of a beautiful garden to be built around a bucket full of toilet paper rolls!
